Winter fishing in the Gulf of Papagayo is done depending with certain species of fish.
In reference to sailfish, marlin, dorado, and wahoo, they are species that move from deep waters to the plains of the Gulf in winter months that go from May to December, these are months when the Ocean currents bring very crystalline and warm waters for some spices in the Gulf of Papagayo, these species as sailfish and marlin, arrive in searches of food like the small mahi-mahi, and Bonita baitfish which have been spawned months ago and which are already 3 pounds weight in general and good size bait for billfish.
With regard to rooster fish compared to billfish, rooster fish are not affected by clear or cloudy waters, because its habitat is in the flat parts of the gulf with a rocky or sandy bottom. On the other hand Sailfish, wahoo and dorado are demanding species in their habitat which usually live in very crystalline and deeper waters where the sea currents are more constant.

Highly RECOMMEND using them. Captain Jose Mendez and his son Jeremy were awesome. They emailed back very promptly. Very happy with their efforts and service...
Great trip with Captain Jose the crew worked hard to get us on fish and we had an absolute blast got into some Spanish Macks Red Snappers and a blitz of Jack Crevalle all on light tackle wish I was still there!
Booked 3 days of fishing in advance hoping it would be great. Wound up catching everything from tuna to grouper to snappers and jacks. Had so much fun catching jack's the third day that they offered to take us out for a fourth on a smaller Bahamas boat with spinning rods. Great time and definitely a great crew.
